The Dough
To make puff pastry cinnamon rolls, you’ll need to start with the dough. You can either make your own puff pastry dough from scratch or buy pre-made sheets from the store. If you’re making your own dough, you’re in luck because I have developed one of the easiest and quickest puff pastry recipes on the internet. Your dough can be ready within 1 hour! However, if you’re even shorter on time, or effort, pre-made puff pastry sheets work just as well.
The Filling
Once you have your puff pastry dough ready, it’s time to make the filling. The filling for puff pastry cinnamon rolls is made with a mixture of cinnamon, sugar, milk and butter. You’ll spread the filling over the rolled-out dough and then roll it into a log shape. From there, you’ll cut the log into individual rolls and place them in a baking dish. After baking for about 20 minutes, your cinnamon rolls will be ready to enjoy!
Variations for Puff Pastry Cinnamon Rolls
While the classic cinnamon sugar filling is delicious, there are many other variations you can try:
- Add chopped nuts or raisins to the filling for extra texture and flavor.
- You can also use different types of sugar, such as brown sugar or coconut sugar, to add a unique twist.
- For a savory version, try using cheese and herbs as the filling.
- The possibilities are endless!

Puff Pastry Cinnamon Rolls
Ingredients
For the Puff Pastry Dough
- 2 Cups Plain Flour
- 1 Cup Salted Butter
- 1/2 Cup Cold Water
- 1/8 Tsp Salt
For the Cinnamon Filling
- 1/2 Cup Softened Butter
- 1 Cup Brown Sugar
- 1 Tbsp Milk
- 1 Tbsp Cinnamon
For the Icing
- 1 Cup Powdered Sugar
- Few Tbsp Water/Milk
Instructions
For the Puff Pastry
- Mix together the flour, cold butter and cold water
- Mix the butter into the flour mixture using a knife until the mixture resembles breadcrumbs or wet sand
- Use your hands to bring the dough together
- Roll out your dough into a large rectangle
- Fold it into 4, forming a square
- Roll out your dough into a long rectangle again and repeat this folding process two more times (see video below for more info)
- Place your dough into cling film or grease proof paper and leave in the fridge for 1-2 hours
For the Cinnamon Filling
- Mix together your butter, sugar, cinnamon and milk
- Set aside until your dough is chilled
Assembling your Puff Pastry Cinnamon Rolls
- Preheat your oven to 190ºC
- Roll out the dough into a long rectangle
- Spread your cinnamon filling onto your dough, spreading all the way to the sides
- Cut the rectangle in half (see video below), vertically
- Roll one half into a cinnamon rolls log and continue to roll the same log onto the next half (see video below)
- Cut your cinnamon roll log into 8 pieces and place on a baking sheet lined with parchment paper
- Bake your rolls in your preheated oven for 20 mins
Making the Icing
- Mix together your powdered sugar and water until a thick icing is formed, set this aside until your cinnamon rolls are done baking
Final Assembly
- Drizzle your icing over your cinnamon rolls and enjoy!
