Funfetti Chocolate Birthday Cake 🧁🎂
Ingredients
For the Funfetti Cake
- 1/3 Cup Softened Butter + 2 tbsps
- 1/3 Cup Vegetable Shortening
- 1 ¼ Cup White Sugar
- 3 Tbsps Brown Sugar
- 3 Large Eggs
- 1 ½ Cup Plain Flour
- 1/2 Cup Corn Flour/Corn Starch
- 1 ½ Tsp Baking Powder
- 1/2 Cup Milk
- 1/4 Cup Funfetti Sprinkles + 2 tbsps
For the Funfetti Crumble
- 1/2 Cup White Sugar
- 1 ½ Tbsps Brown Sugar
- 1/2 Cup Plain Flour
- 1/4 Cup Corn Flour/Corn Starch
- 1/2 Tsp Baking Powder
- 1/4 Tsp Salt
- 1/4 Cup Softened Butter
- 1/4 Cup Funfetti Sprinkles
For the Chocolate Frosting
- 1/2 Cup Softened Butter + 2 tbsps
- 2 Oz Softened Cream Cheese
- 1/4 Cup Cocoa Powder + 2 tbsps
- 2 ½ Cups Powdered Sugar
- 1/4 Cup Melted Chocolate
- 1/4 Cup Milk depending on your frosting consistency
Decoration
- 1/2 Cup Chocolate Chips for the chocolate drip
- Extra Funfetti Sprinkles
Instructions
For the Funfetti Cake
- Preheat your oven to 175ºC
- Cream together the softened butter, vegetable shortening, white and brown sugar until combined1/3 Cup Softened Butter, 1/3 Cup Vegetable Shortening, 1 ¼ Cup White Sugar, 3 Tbsps Brown Sugar
- Whisk in your eggs until pale and fluffy3 Large Eggs
- Stir in your flour, corn flour, baking powder and milk until combined1 ½ Cup Plain Flour, 1/2 Cup Corn Flour/Corn Starch, 1 ½ Tsp Baking Powder, 1/2 Cup Milk
- Gently, stir it in your funfetti sprinkles1/4 Cup Funfetti Sprinkles
- Grease and line three 6-inch cake pans with parchment paper
- Divide your funfetti cake batter into these three pans
- Bake your cakes in a preheated oven for 25-30 mins or until golden brown
For the Funfetti Crumble
- Preheat/keep your oven at 175ºC
- Mix together your white sugar, brown sugar, plain flour, corn flour, baking powder and salt1/2 Cup White Sugar, 1 ½ Tbsps Brown Sugar, 1/2 Cup Plain Flour, 1/4 Cup Corn Flour/Corn Starch, 1/2 Tsp Baking Powder, 1/4 Tsp Salt
- Mix in your softened butter until a crumbly dough forms1/4 Cup Softened Butter
- Mix in your funfetti sprinkles1/4 Cup Funfetti Sprinkles
- Spread your mixture onto a baking tray that is greased and lined with parchment paper
- Bake in your preheated oven for 15 mins or until golden brown
For the Chocolate Buttercream
- Mix together your butter and cream cheese until combined1/2 Cup Softened Butter, 2 Oz Softened Cream Cheese
- Mix in your cocoa powder, powdered sugar and melted chocolate until combined1/4 Cup Cocoa Powder, 2 ½ Cups Powdered Sugar, 1/4 Cup Melted Chocolate
- Stream in a bit of milk at a time, depending on the consistency of your frosting and mix until combined1/4 Cup Milk
Assembling the Cake
- Once cooled, level the tops of your cake off with a cake leveller or serrated knife
- Spread a small amount of frosting onto your cake turntable/cake plate
- Place your first cake layer down onto your cake turntable
- Spread some chocolate frosting onto the first layer of your cake
- Sprinkle on some chocolate chips and funfetti crumble mixture
- Place your second cake layer on and complete the process above, again (see video below for more details)
- Once you have placed your last cake layer on top (upside down so you get a cool look a flat edge to the top of your cake), spread a thin layer of buttercream all over your cake. This is known as the crumb coat so do not worry if you can still see some crumbs in this layer
- Let the cake cool in the fridge for about 20 mins
- After cooling, spread a second, thicker layer of frosting all over the cake, spreading and smoothing with a combination of offset spatulas and cake scrapers (see video below for more)
- After you have smoothed out your cake, melt some chocolate chips and pour this over your cake, creating a chocolate drip effect1/2 Cup Chocolate Chips
- Sprinkle your funfetti crumble mixture on the top and bottom perimeters of your cakeExtra Funfetti Sprinkles
