Giant Funfetti Cupcake Cake 🧁
Ingredients
For the Funfetti Cupcake
- 1 ⅔ Cup Softened Butter
- 1 ⅔ Cup White Sugar
- 6 Large Eggs
- 1 ⅔ Cup Self-Raising Flour
- 4 Tbsps Milk
- 1/3 Cup Funfetti Sprinkles
For the Buttercream
- 1 Cup Softened Butter
- 4 Cups Powdered Sugar
- Few Tbsps Milk
Instructions
For the Funfetti Cake
- Preheat your oven to 175ºC
- Cream together the butter and white sugar until combined1 ⅔ Cup Softened Butter, 1 ⅔ Cup White Sugar
- Whisk in 6 eggs until the batter is pale and fluffy6 Large Eggs
- Gently fold in your flour, milk and funfetti sprinkles1 ⅔ Cup Self-Raising Flour, 4 Tbsps Milk, 1/3 Cup Funfetti Sprinkles
- Grease and line the cupcake pan, thoroughly
- Divide your batter into each pan
- Bake your cake in the oven for about 50 mins
For the Buttercream Frosting
- Cream together your butter and powdered sugar1 Cup Softened Butter, 4 Cups Powdered Sugar
- Gradually stream in your milk while mixing and stop adding milk when you reached the desired consistencyFew Tbsps Milk
Assembling the Cake
- Once the cakes are baked and cooled completely, run a knife around the cake pans and gently remove the cakes from your pan
- Place your first cake layer onto your cake plate
- Spread some buttercream onto your cake and then add the next cake layer (feel free to add fillings such as chocolate chips or jam to spice up your cake)
- Spread the entire cake with a thin layer of buttercream and then place in the fridge for 1 hour or the freezer for 30 mins
- Spread a layer of light pink/white buttercream on the bottom ‘cake wrapper’ part of the cake, smooth this out with a spatula
- Fill a piping bag with pink frosting and a large star piping tip
- Starting from the bottom of your ‘cake wrapper’, pipe in one long line onto the top of your cupcake (the same way as if you were piping a normal cupcake)
- Sprinkle some funfetti sprinkles on the top of your cupcake
- Slice and enjoy!
