- 1 Chocolate Box Cake Mix
- Eggs
- Melted Butter
- Milk
- Chocolate Chips coated in a light dusting of flour to prevent sinking when baking
For the Chocolate Ganache Frosting
- 1 Cup Chocolate
- 1/4 Cup Heavy Cream
- 1/4 Cup Powdered Sugar
For the Cookie Cake + Mini Cookies
- 1/2 Cup Melted Butter
- 1/2 Cup Brown Sugar
- 1/4 Cup White Sugar
- 1 Large Egg
- 1 โ Cup Plain Flour
- 1 Tbsp Corn Flour
- 1/4 Tsp Baking Soda
- 3/4 Cup Chocolate Chips/Chunks
Instructions
For the Chocolate Box Cake Mix
- Preheat your oven according to your box cake mix instructions
- Mix together your cake mix, eggs, butter and milk in a large bowl and mix until combined (used butter in place of oil and milk in place of water according to your own cake mix)1 Chocolate Box Cake Mix, Eggs, Melted Butter, Milk
- Gently stir in your chocolate chips until combinedChocolate Chips
- Divide your batter into two 6 inch cake pans that have been greased and lined with parchment paper
- Bake your cake in your preheated oven according to your box mix instructions
For the Chocolate Ganache Frosting
- Warm your heavy cream in in the microwave or on the stove1/4 Cup Heavy Cream
- Pour your heavy cream over your chocolate and sifted powdered sugar and let the mixture sit for about 2 mins1 Cup Chocolate, 1/4 Cup Powdered Sugar
- After two minutes is up, gently stir your chocolate mixture until all your chocolate is melted and well incorporated
For the Cookie Cake + Mini Chocolate Chip Cookies
- Cream together the butter, brown sugar and white sugar until combined1/2 Cup Melted Butter, 1/2 Cup Brown Sugar, 1/4 Cup White Sugar
- Whisk in your egg until combined1 Large Egg
- Gently fold in your flour, corn flour, baking soda and chocolate chips1 โ Cup Plain Flour, 1 Tbsp Corn Flour, 1/4 Tsp Baking Soda, 3/4 Cup Chocolate Chips/Chunks
- Transfer about half of your dough into a 6 inch cake pan that is greased and lined with parchment
- With the rest of your dough use tsp amounts of dough and place them onto a baking tray
- Bake the cookie cake in the oven for around 15-20 mins and the mini cookies for around 5-6 mins (bake in the same preheated oven as your cake)
Assembling the Cake
- Spread a small amount of frosting in the middle of your cake board/turntable
- Place down your first cake layer
- Spread some chocolate frosting onto your cake and spread it out
- Place down your cookie cake layer
- Spread more chocolate frosting onto your cake
- Add your last layer of cake, making sure to flip it so the bottom of your cake is facing upwards (makes for a flatter edged cake at the top)
- Cover your whole cake in a thin layer of frosting
- Place your cake in the fridge for around 20 mins
- Pipe decorations on the top and bottom of your cake
- Place your mini cookies on the top perimeter of your cake
- Slice and enjoy!
