I have adapted the recipe slightly as I can’t seem to find cake flour in the UK, therefore, I substituted this by switching from cake flour to all-purpose plus an added 1/3 cup of corn flour. I also used salted butter and reduced the amount of extra added salt to account for the fact that I just prefer using salted butter when baking.

INGREDIENTS
- 1 ¼ Cup Softened Salted Butter
- 1 Cup White Sugar Plus 2 tbsps
- 1 ¼ Cup Brown Sugar
- 2 Large Eggs
- 1 ¾ Cup Plain Flour
- 1/3 Cup Corn Flour/Corn Starch
- 1 ⅔ Cup Bread Flour
- 1 ¼ Tsp Baking Soda
- 1 ½ Tsp Baking Powder
- 1/2 Tsp Salt
- 1 ¼ Cup Chocolate Chips
INSTRUCTIONS
- Cream together your butter, white sugar and brown sugar- for around 5-10 mins- until pale and fluffy
- Mix in your eggs until combined
- Gently fold in your flour, corn flour, bread flour, baking soda, baking powder, salt and chocolate chips until combined
- Measure out 6 ounce balls of dough and place them onto a plate/baking tray that is lined with parchment paper
- Place your cookie dough balls in the fridge anywhere between 4-72 hours (the longer they stay in the fridge, the better the flavour and texture) – I left them for around 4 hours
- Preheat your oven to 175ºC
- Take your chilled cookies out of the fridge, after your oven has preheated, and arrange on a baking tray
- Bake your cookies in your preheated oven for around 15 mins or until lightly golden
