- 1 Tsp Baking Powder
- 3/4 Tsp Baking Soda
- 1/2 Cup Warm Water
- 1/2 Cup Warm Milk
- 1/4 Cup Melted Salted Butter
- 1 Large Egg
Cookie Dough Batter
- 1/2 Cup Salted Softened Butter
- 1/4 Cup White Sugar
- 1/2 Cup Brown Sugar
- 1 Large Egg
- 1 Cup Plain Flour
- 1/2 Cup Corn Flour/Corn Starch
- 1/2 Tsp Baking Soda
- 1 Cup Chocolate Chips
For Decorating
- 1/2 Cup Melted Chocolate
The Recipe
Now that you have your ingredients let’s get started on making this delicious Chocolate Brookies Cake.
1. For the Chocolate Cake Batter
- In a large bowl whisk together your plain flour, white sugar, sifted cocoa powder, baking powder and baking soda until combined 1 Cup Plain Flour, 1 Cup White Sugar, 1/4 Cup Sifted Cocoa Powder, 1 Tsp Baking Powder, 3/4 Tsp Baking Soda
- In a separate bowl/jug, mix together your water, milk, melted salted butter and egg1/2 Cup Warm Water, 1/2 Cup Warm Milk, 1/4 Cup Melted Salted Butter, 1 Large Egg
- Add your wet ingredients into your dry ingredients and gently mix until smooth
- Set your batter aside while you make the cookie dough batter
2. For the Cookie Dough Batter
- Preheat your oven to 175ºC
- Cream together your butter, white sugar and brown sugar until combined 1/2 Cup Salted Softened Butter, 1/4 Cup White Sugar, 1/2 Cup Brown Sugar
- Whisk in your egg until smooth1 Large Egg
- Gently fold in your flour, corn flour, baking soda and chocolate chips until a cookie dough forms1 Cup Plain Flour, 1/2 Cup Corn Flour/Corn Starch, 1/2 Tsp Baking Soda, 1 Cup Chocolate Chips
- Set aside while you grease and line an 8 inch cake pan with parchment paper
3. Assembling the Brookie Cake
- Pour all of your chocolate cake batter into your prepared cake pan
- Take spoonfuls of cookie dough batter and place them on top of the chocolate cake batter (see video below for more)- do this until you have no more cookie dough left
- Place your Brookie cake in your preheated oven for around 45 mins or until a toothpick inserted into the cake comes out clean (you may need to place some foil over the cake pan to decrease the chance of the top burning)
4. Decorating
- Once the cake has cooled pour melted chocolate over the top of the cake1/2 Cup Melted Chocolate
