For the Funfetti Cake Batter
- 6 Tbsps Softened Salted Butter
- 3/4 Cup White Sugar + 4 tsps (add at the same time)
- 3 Tbsps Brown Sugar
- 2 Large Eggs
- 1 ¼ Cup Plain Flour + 1 tbsp (add at the same time)
- 1 Tbsp Milk Powder (optional)
- 2 ¼ Tsp Baking Powder
- 1/8 Tsp Salt
- 4 Tbsps Olive Oil
- 1/3 Cup Milk
- 1/3 Cup Rainbow Sprinkles
For the Funfetti Crumb Topping
- 1/4 Cup White Sugar
- 2 ½ Tbsps Brown Sugar
- 1/3 Cup Plain Flour + 2 tbsps (add at the same time)
- 1/2 Tbsps Milk Powder (optional)
- 1 Pinch Baking Powder
- 1/8 Tsp Salt
- 3 Tbsps Melted Butter
- 3 Tbsps Rainbow Sprinkles
Instructions:
For the Funfetti Cake Batter
- Cream together the butter, white sugar and brown sugar until combined
- Add your 2 eggs and mix until pale and fluffy, around 3 mins
- Gently stir in your flour, milk powder, baking powder, salt, olive oil and milk until just combined
- Mix in your sprinkles and set aside while you make the Funfetti crumb mixture
For the Funfetti Crumb Mixture
- Preheat your oven to 165ºC
- Combine the white sugar, brown sugar, plain flour, milk powder, baking powder, salt and melted butter
- Mix in your rainbow sprinkles until combined
Assembling the Cake
- Grease a square baking pan that is lined with parchment paper
- Pour your cake batter into the pan and spread out to the sides
- Spread your crumble mixture over the cake batter so that the entire surface of the pan is covered with crumbs
- Bake your cake in your preheated oven for around 25-30 mins or until a toothpick inserted into the centre of the cake comes out clean
- Once out of the oven let cool completely and then slice into squares
