Ingredients for Homemade Honeycomb:
- 1/2 Cup White Sugar
- 4 Tbsps Golden Syrup
- 1 ½ Tsp Baking Soda
- Optional: Milk Chocolate for dipping
Instructions:
- IMPORTANT: be sure to prepare all ingredients, tools and surfaces before starting
- In a saucepan add your sugar and golden syrup
- Place your saucepan on low-medium heat and mix until your sugar is fully dissolved (this may take a few minutes so be patient)
- Once your sugar has dissolved, do not stir your mixture anymore
- Turn up the heat to medium and let the sugar gently simmer for around 3-4 mins or until it turns a deep amber colour (see video below for visual details)
- Once your sugar has simmered immediately take it off the heat and whisk in your prepared baking soda
- Whisk for no more than 10 seconds
- Immediately pour your honeycomb mixture in your prepared, greased baking dish that is lined with parchment paper
- Gently move the honeycomb mixture around the baking dish by moving the pan (do not use a spatula or your hands- the sugar is too HOT)
- Leave your honeycomb to set at room temperature for at least 2 hours (do not touch it before then as again this sugar is HOT)
- After your honeycomb has completely cooled, smash into pieces using a rolling pin or a knife and cover in melted chocolate for added decadence
- Serve at room temperature and enjoy!
