For the Chocolate Pudding
- 1 Cup White Sugar
- 3/4 Cup Almond Flour/Plain Flour + 3 tbsps
- 6 Tsp Cocoa Powder
- 3/4 Tsp Baking Soda
- 3/4 Tsp Baking Powder
- 1/2 Tsp Salt
- 1/4 Tsp Cinnamon (optional)
- 1 Large Egg
- 1/2 Cup Milk
- 1/4 Cup Olive Oil
- 1/4 Cup Hot Water
For the Chocolate Chip Cookie Dough
- 6 Tbsps Softened Salted Butter
- 1/2 Cup Brown Sugar
- 1/8 Cup White Sugar
- 1 Large Egg
- 1 Cup Almond Flour/Plain Flour
- 1/2 Tsp Baking Soda
- 1 ½ Cup Chocolate Chips
Instructions
For the Chocolate Pudding
- Preheat your oven to 175ºC
- Combine your white sugar, flour, cocoa powder, baking soda, baking powder, salt and cinnamon in a bowl and whisk until combined
- Add in your egg, olive oil and milk and mix until a smooth batter forms
- Pour in your hot water and whisk until everything is incorporated (do not over mix here!)
- Prepare a 20×20 cm square baking dish with parchment paper
- Pour your batter into the greased baking dish
- Bake your pudding in your preheated oven for around 20-25 mins or until the cake is firm in the centre (not too jiggly)
For the Chocolate Chip Cookie Dough
- Cream together your butter, white and brown sugar until combined
- Add in your egg and mix until pale and fluffy
- Fold in your flour, baking soda and chocolate chips until a dough forms
- Place your cookie dough in the fridge until your chocolate pudding has finished baking
Assembling the Brookie Bars
- After your cake has finished baking, leave it to cool slightly for around 2 mins at room temperature just so it is easier to handle
- Grab your chilled cookie dough and evenly spread it on top of your chocolate pudding
