What makes this Cookie Cake Recipe so Good?
Golden Syrup
1/4 cup of Syrup in this recipe contributes a great deal of caramel flavour. It also creates a softer overall texture in this cookie cake, in a way that remains chewy compared to a ‘cake-like’ cookie.
Corn Flour/Corn Starch
Corn flour in this recipe, reduces the amount of gluten produced when mixing, therefore producing a softer cookie.
Good Quality Chocolate
One thing that makes an incredible difference in the overall taste and texture in cookies is indeed the type of chocolate that you use.
In my opinion, the best type of chocolate is either really high quality milk chocolate such as a Lindt Milk Chocolate bars, or basically any chocolate bar that is your favourite e.g. dairy milk, galaxy. Using chocolate chips in baking is great but it is hard to always find good quality ones, so in my opinion just use whatever you like the taste of best and if your using a bar, make sure to chop up your chocolate unevenly so you get a mixture of textures and shapes in every bite.
What makes a Cookie Cake, Cakey vs Chewy?
The use and proportion of baking soda vs baking powder can be crucial when making cookies. Baking powder creates too much rise when baking, producing a fluffy, cakey cookie. Whereas, baking soda releases CO2 gas which helps leaven the dough, creating a softer cookie.
Of course the addition of slightly melted butter compared to chilled butter will create a huge difference in ‘chewiness’ as well as the amount of eggs and the type/proportion of sugar used when baking cookies. In this particular recipe, the addition of golden syrup also adds to the cookie’s chewiness as well as perfectly complimenting the chocolate taste with a caramelly undertone.

Chocolate Chip Cookie Cake
Ingredients
- 1 Cup Softened Salted Butter
- 1/2 Cup White Sugar
- 1 Cup Brown Sugar
- 2 Large Eggs
- 2 Cups Plain Flour
- 1/2 Cup Corn Flour
- 3/4 Tsp Baking Soda
- 1/4 Cup Golden Syrup
- 1/2 Cup Chocolate Chips
Instructions
- Preheat your oven to 175ºC
- Cream your softened butter and sugars together until light and fluffy.
- Mix in your two eggs until pale and fluffy.
- Add your flour, corn flour, baking soda and golden syrup and mix until a rough dough has formed.
- Fold in your chocolate chips.
- Place your dough into two 6” cake pans or one 8” cake pan.
- Bake in your preheated oven for about 20-25 mins.
- Melt some milk chocolate and spread this over the top of your cake.
- Enjoy!
