Have you ever wanted to make a recipe only to find that you don’t have the right ingredients to make it! Well this blog post outlines the Top 5 Baking Ingredient Substitutes that Change the game when in the kitchen.

1. Egg Substitute
– Flax Egg
A very popular option from the vegan community, a flax egg is essentially flax seeds mixed with water. To create a flaxseed egg, mix 1 tbsp of ground flaxseed meal with 3 tbsps of water. Mix this and let it sit in the fridge for about 10 mins. (This is the recipe equivalent for 1 egg)
– Nut Butter
Nut butter such as peanut and almond butter is a great alternative to an egg; they also add a lovely flavour to your bakes, especially when making muffins and cookies. 3 tbsps of nut butter is equivalent to 1 large egg.
– Buttermilk
Buttermilk is a popular ingredient in the US which is used in bakes such as red velvet cake to produce and more tender and flavourful cake. 1/4 cup of buttermilk is equivalent to 1 large egg here. (see below for buttermilk ingredient substitutes)
– Condensed Milk
Condensed milk is a thick and sweet alternative to regular milk, usually used when baking caramel or tres leches cake. Similarly to buttermilk, 1/4 cup of condensed milk is equivalent to 1 large egg.
2. Powdered Sugar/Icing Sugar Substitute
Picture this. You’re making a 4 tier Funfetti Cake. (try this funfetti cake recipe here) You’ve just finished baking all your cakes and are ready to start decorating. You measure your butter and go to your pantry for powdered sugar but… YOUR OUT OF POWDERED SUGAR! This is exactly how I found out about this ingredients substitue.
Use 1 cup of white sugar and 1 tbsp of corn flour/cornstarch. Blend this mixture up in a blender or food processor for about 5 mins (stirring between each minute). And voila, powdered sugar! (if your sugar is still grainy, continue to blend for a further 2-5 mins).

3. Buttermilk Substitute
Living in the UK, buttermilk is really hard to come by. That’s why I came across this buttermilk substitue, that I wouldn’t recommend drinking but is great for baking with.
Simply mix 1 cup of Milk (whole, semi-skimmed or skimmed) and 1 tbsp of vinegar (white). Leave to rest for about 10 mins, come back and you have yourself some perfectly curdled buttermilk, great for red velvet cakes, pancakes and more!
4. Cake Flour/Self-Raising Flour
– Cake Flour Ingredient Substitute
This is used in cakes to produce a softer and tender crumb. This ingredient substitute is an easy fix. Mix one cup of Plain flour with 2 tbsps of cornflour/cornstarch
– Self-Raising Flour Ingredient Substitute
Self-raising flour is basically an easier and more lazy way of providing leavening agents into your bakes. Mix one cup of Plain flour with 1 tsp baking powder, 1/4 tsp baking soda and a pinch of salt.
5. Corn Syrup Substitute
Corn syrup is a thick, sweet sugar syrup used in confectionary sweet making, caramel sauces, cookies, rice crispiest, granola bars, sorbets, ice creams and much more. These alternatives will not work for all recipes calling for corn syrup, especially for candy making, but a lot of them are an easy swap to this hard to find syrup:
– Honey
1 cup of Honey = 1 cup of Corn Syrup. Honey is a great natural sweetener, perfect for cookies, caramel sauces, granola bars and especially sorbets.
– Golden Syrup
A British classic, golden syrup is a thick, golden, caramel syrup, most commonly used when making flapjacks (not pancakes) and syrup sponge cakes.
1 cup Golden Syrup = 1 Cup Corn Syrup.
– Molasses
Molasses is a deeper and darker alternative to golden syrup. It’s used to make brown sugar.
(BONUS SUBSTITUTION: mix white sugar and molasses to make brown sugar)
1 cup Molasses = 1 Cup Corn Syrup
– Maple Syrup
A lighter, syrup, commonly used on pancakes.
1 cup Maple Syrup = 1 Cup Corns Syrup
– Agave Nectar
Agave syrup is a sweetener produced from several species of agave. It is probably the closest match to corn syrup out of all the ingredient substitutes in this list.
1 cup Agave Nectar = 1 cup Corn Syrup
