What is a Golden Syrup Loaf Cake?
Haven’t heard of a syrup cake before? Well this mini loaf is traditionally British, served in schools or found in Tescos (Lyle’s Golden Syrup Cake).
What does Golden Syrup do in cakes?
Golden syrup adds a delicious, golden caramelly flavour to cakes. It also creates a fluffy texture, acting as a second binder (similar to what eggs do).
What Golden Syrup do I use?
I usually use Lyle’s Golden Syrup. You can buy this from local supermarkets in the UK. It is a lot harder to find in parts of the US. You can find it sometimes on Amazon here.
I have a blog post on the 5 most common baking alternatives here, which goes over some alternatives to golden syrup. The only thing that I would not recommend when baking this is corn syrup or agave nectar.
Do I have to use the Spices in this recipe?
The spices are optional in this recipe. Ginger and cinnamon powder bring out the flavour of the golden syrup, however, if you don’t have these on hand, you are still able to make this cake.
Why is no Salt used in this Recipe?
You may notice that there is no salt in this recipe. This is because salted butter is used in place. Salted butter, in my opinion adds 10 times the flavour compared to unsalted butter; plus it’s easier than adding and measuring salt, separately into every recipe.

Golden Syrup Loaf Cake
Ingredients
For the Golden Syrup Cake
- 1/3 Cup Salted Butter
- 1/4 Cup Golden Syrup
- 1/3 Cup Brown Sugar
- 1 Large Egg
- 3/4 Cup Plain Flour
- 1/2 Tsp Baking Powder
- 1/4 Tsp Baking Soda
- 1/2 Tsp Ginger Powder
- 1/4 Tsp Cinnamon Powder
- 1/4 Cup Milk
For the Syrup Glaze
- 4 Tbsp Golden Syrup
- 1 Tbsp Hot water or Warm Milk
Instructions
For the Golden Syrup Cake
- Preheat your oven to 180ºC
- Add your butter and golden syrup to a bowl and microwave for about 40s or until the butter has fully melted (you may need to stir between each 30s)
- Mix in your Brown sugar and then whisk in your egg until pale and fluffy
- Add in your flour, baking powder, baking soda, ginger powder, cinnamon powder and milk
- Pour your batter into a loaf pan that is greased and lined with parchment paper
- Bake in your preheated oven for 25-30 mins
For the Syrup Glaze
- Mix your hot water/milk with the golden syrup
- Make small incisions on top of your cake and pour all/most of your syrup onto your cake (this ensures your cake stays moist)
- Slice and enjoy!
