Ingredients
For the Chocolate Cake
- 1/4 Cup Softened Butter
- 3/4 Cup White Sugar
- 1 Large Egg
- 1/4 Cup Warm Milk
- 3/4 Cup Plain Flour
- 1/4 Cup Cocoa Powder
- 1/2 Tsp Baking Soda
- 1/4 Tsp Salt
- 1/4 Cup Hot, Strong Coffee
For the Chocolate Ganache
- 1 Cup Chocolate
- 1/3 Cup Heavy Cream
- 1/4 Cup Powdered Sugar
Instructions
For the Chocolate Cake
- Preheat your oven to 175ºC
- Cream together the butter and sugar
- Whisk in your egg until pale and fluffy
- Gradually whisk in your warm milk, making sure to whisk fast so you don’t scramble your eggs
- Add your flour, cocoa powder, baking soda, salt and hot coffee into your wet ingredients and mix fast so your eggs do not scramble (for about 30s-1 min so you don’t over mix your batter)
- Pour your batter into two 6 inch cake pans that have been greased and lined with parchment paper
- Bake your cakes in your preheated oven for 20-25 mins or until a toothpick inserted into the cake, comes out clean
For the Chocolate Ganache
- Place your chocolate and heavy cream into a bowl and either place over a double boiler or microwave until the chocolate is melted
- Mix in your powdered sugar and set aside until your cakes have cooled
Assembling the Chocolate Cake
- Place some frosting onto your turntable/cake plate
- Place your first cake layer onto your turntable
- Spread some ganache onto your cake layer
- Place your second cake layer on top
- Cut out rectangle pieces of parchment paper and place these underneath the cake (see video below)
- Pour your chocolate ganache over your cake, spreading the chocolate over all the sides with a spatula
- Remove the parchment pieces
- Sprinkle some chocolate sprinkles on the top of your cake and enjoy!
