For the Oatmeal Cookie Base
- 4 Tbsps Softened Salted Butter
- 1 ½ Tbsps White Sugar
- 1/4 Cup Brown Sugar (+ 2 tbsps)
- 1 Large Egg
- 1/4 Cup Plain Flour
- 3/4 Cup Rolled Oats
- 1/8 Tsp Baking Powder
- 1 Pinch Baking Soda
- 1/4 Tsp Salt
For the Pie Filling
- 3 Tbsps Softened Salted Butter
- 1/2 Cup Brown Sugar
- 1/3 Cup Golden Syrup/Maple Syrup
- 2 Large Eggs
- 1 ½ Tbsps Milk Powder (optional)
- 1 Tsp White Vinegar
Assembly
- 1/4 Cup Chocolate Chips/Nuts
Instructions:
For the Oatmeal Cookie Base
- Preheat your oven to 175ºC
- Cream together the butter, brown sugar and white sugar until combined
- Mix in the egg until the batter turns pale and fluffy
- Stir in the flour, rolled oats, baking powder, baking soda and salt and mix until just combined
- Place your cookie dough into a small rectangle baking dish that has been greased and lined with parchment paper
- Bake your oatmeal cookie base in your preheated oven for around 15-20 mins
For the Pie Filling
- Mix together, the butter, brown sugar, golden syrup, eggs, milk powder and vinegar until combined (using a whisk to avoid lumps)
- Pour your pie filling mixture on top of your baked oatmeal cookie base
- Add your chocolate chips or nuts and spread them around the baking dish
- Bake your oatmeal pie bars in the same preheated oven for around 30-35 mins or until the edges are set and the middle is slightly jiggly
- Leave the pie bars to cool completely at room temperature or in the fridge
- Slice the oatmeal pie bars into squares and enjoy!
