What is a Marble Cake and How do you make one?
A marble cake, similar to a zebra cake, is basically a mix of chocolate and vanilla cake. Chocolate batter is swirled in the cake pan with vanilla batter that creates a very distinct swirl pattern. They are traditionally baked in a Bundt cake pan as a marble Bundt cake, although bakers also opt for the standard 6 inch cake pan.
Marble cake starts off as any normal vanilla cake would: butter, sugar, eggs, flour, baking powder and milk. Half of the batter is distributed into its cake pans and then cocoa powder and more milk is added to ensure the chocolate batter does not turn out dry once baked. And there you have it. A classic marble cake recipe, perfect for this coming Thanksgiving and Christmas.
How long can I store Marble Cake?
Store your cake in a cool, dry place and place in an airtight container for up to 3 days. If stored in the fridge, the cake can last up to 5 days (but keep in mind this can make your marble cake quite dry if left in the fridge for too long).

Ingredients
For the Marble Cake
- 1/2 Cup Softened Butter
- 1 Cup White Sugar
- 2 Large Eggs
- 1 ¼ Cup Plain Flour
- 1 Tsp Baking Powder
- 1/2 Cup Milk
- 1/4 Cup Cocoa Powder for the chocolate batter
- 1/4 Cup Milk for the chocolate batter
For the Chocolate Frosting
- 1/2 Cup Softened Butter
- 3 ½ Cup Powdered Sugar
- 1/4 Cup Cocoa Powder
- 3 ½ Tbsps Milk
- 1/4 Cup Melted Chocolate
Assembling the Cake
- 1/4 Cup Milk
- Chocolate Chips for the filling
- Melted Chocolate for the chocolate drip
- Sprinkles to decorate
Instructions
For the Marble Cake
- Preheat your oven to 180ºC (160ºC fan)
- Cream the butter and sugar together
- Whisk in the eggs until the mixture is pale and fluffy
- Mix in your flour, baking soda and milk until fully combined
- Grease and line two 6-inch cake pans
- Divide half of your batter into each cake pan
- To the other half of your batter, mix in your cocoa powder and milk
- Divide the rest of the chocolate batter into your two pans
- Swirl the batter using a knife
- Bake your cakes in the preheated oven for 20-25 mins or until golden brown
For the Chocolate Frosting
- Mix the butter, cocoa powder and powdered sugar in a bowl
- Add in your milk and melted chocolate and mix until smooth
Assembling the Cake
- Place your first cake layer onto your cake board
- Spread some milk onto your cake so it stays moist for longer
- Spread a layer of chocolate frosting onto your cake
- Sprinkle a layer of chocolate chips
- Place your next layer on top
- Spread a thin layer of buttercream all over your cake, using a palette knife (this is the crumb coat so don’t worry if you can still see crumbs in this layer)
- Place your cake in the freezer for 20 mins or the fridge for 1 hour
- Spread a second thicker layer of frosting on your cake
- Smooth out the top using a spatula
- Pour melted chocolate over your cake, creating a chocolate drip
- After the chocolate has set, pipe small blobs of icing around the top and bottom of your cake
- Add sprinkles to decorate and enjoy!
