How is Milk Bread different from Regular Bread?
Milk Bread is, originally, a Japanese developed bread made from Tangzhong, a pre-prepared paste made from water and flour. This paste creates a unique texture when used in bread, resulting in soft, pillowy dough that pulls apart easily.
The term ‘milk bread’ is mostly used in today’s baking world as simply a bread with a very smooth, fluffy and light texture. It is mostly created from an enriched dough and the application of many layers of butter.
(this is known as lamination; a technique used to make the flaky layers in croissants).
How do you eat Japanese Milk Bread?
Traditionally, milk bread is sliced thickly and served with butter or jam. These days, westernised versions of milk bread look at incorporating the bread into every meal of the day. From the traditional breakfast to a grilled cheese lunch or dinner, to a Nutella stuffed dessert to end the night.
In other words, use this sweet bread in any way you see right, to share with friends or, my personal choice, a full loaf to yourself!
This Pull-apart Milk Bread recipe is also very customisable. It is simply a base recipe for you to get creative with flavours:
- Mix half of your dough with a bit of cocoa powder to make a marble dough
- Sprinkle cinnamon sugar when adding the butter to your dough for a cinnamon roll pull-apart milk bread
- Spread nutella, or your favourite flavoured spread, onto the tops of each dough piece for a nutella pull-apart bread

Pull-apart Milk Bread
Ingredients
- 1 Large Egg
- 1/2 Cup Powdered Sugar Add in two separate parts
- 2/3 Cup Warm Milk
- 1 Tbsp Yeast
- 2 Cups Plain Flour
- 2 Tbsps Softened Butter
- 1 1/2 Tbsps Softened Butter Added separately
Instructions
For the Dough
- Mix the egg, half of your powdered sugar and warm milk together
- Sprinkle over your yeast
- Let rest for 5 mins
- Stir in the flour and other half of your powdered sugar until a rough dough has formed
- Let the dough rest for 20 mins
- Knead in 2 tbsps of softened butter in parts, until all of the butter is incorporated into your dough
- Let the dough rest for 20 mins
- Roll out your dough into a large rectangle
- Spread half of your 1 1/2 tbsps of softened butter over your rectangle
- Fold your dough and repeat the process, spreading the other half and then folding again
- Roll your dough out into a rectangle again and roll it up like a cinnamon roll
- Cut into 8 pieces
- Place your rolls into a greased pan
- Leave to rest for 1 hour
- Preheat your oven to 170ºC
- Bake your bread in your preheated oven for 20-25 mins
- Brush with melted butter, straight out of the oven and Enjoy!
