Today I am recreating the famous Milk Bar Pancake Cake 🤯 I have been obsessed with this cake for a while and really wanted to recreate it for your guys. This cake was so soft and moist and surprisingly the maple syrup flavour wasn’t overpowering but still had a hint of sweet maple with every bite. What is Milk Bar and a Pancake Cake?
Milk Bar is a popular bakery chain founded by Christina Tosi in New York City. It is known for its unique and inventive desserts, which are loved by people all around the world. One of its most popular desserts is the Funfetti Cake and recently the Pancake Cake, which is a towering stack of fluffy pancake-like cake layers with sweet frosting and maple fillings. It is a perfect combination of sweet and salty flavors that everyone loves.
Pancake Cake Customisation
If you’re a fan of this mouth-watering dessert and want to recreate it at home, then the good news is that you can! You can make this dessert in the comfort of your own kitchen with a few simple ingredients and some basic cooking skills. The best part about making Pancake Cake at home is that you can customize the recipe to your liking. You can experiment with different toppings, such as:

Cornstarch and its Benefits in Cakes

Recreating Milk Bar’s Pancake Cake 🥞
Ingredients
Maple Milk Bar Cake
- 1/2 Cup Softened Butter + 1 tbsps
- 1 ¼ Cup White Sugar
- 1/4 Cup Brown Sugar
- 2 Large Eggs
- 1 Cup Plain Flour
- 1/2 Cup Corn Starch
- 1 Tsp Baking Powder
- 1/2 Cup Buttermilk
- 1/4 Cup Maple Syrup
Maple Cookie Crumbs
- 1/4 Cup Softened Butter
- 1/2 Cup Brown Sugar
- 1 ½ Tbsp White Sugar
- 1/2 Cup Plain Flour
- 1/4 Cup Corn Starch
- 1/2 Tsp Baking Powder
- 3 Tbsps Maple Syrup
Maple Cookie Butter
- 1/4 Cup Maple Syrup
- Maple Cookies Crumbs
Maple Buttercream
- 1/4 Cup Softened Butter
- 3 Tbsps Maple Syrup
- 1-2 Cups Powdered Sugar
- Few Tbsps Milk If needed
Maple Simple Syrup
- 4 Tbsps Milk
- 3 Tbsps Maple Syrup
Decorations
- Cream Fondant
- Maple Syrup
Instructions
For the Maple Cake
- Preheat your oven to 175ºC
- Mix together the butter, white sugar and brown sugar1/2 Cup Softened Butter, 1 ¼ Cup White Sugar, 1/4 Cup Brown Sugar
- Mix in your eggs until the mixture is pale and fluffy2 Large Eggs
- Gently fold in your flour, corn starch, baking powder, buttermilk and maple syrup for about a minute until the batter comes together1 Cup Plain Flour, 1/2 Cup Corn Starch, 1 Tsp Baking Powder, 1/2 Cup Buttermilk, 1/4 Cup Maple Syrup
- Divide your batter between three 6 inch cake pans which have been greased and lined with parchment paper
- Bake your cakes in your preheated oven for about 20-25 mins
For the Maple Cookies
- Cream together your butter, white sugar, brown sugar, plain flour, corn starch, baking powder and maple syrup until a dough forms1/4 Cup Softened Butter, 1/2 Cup Brown Sugar, 1 ½ Tbsp White Sugar, 1/2 Cup Plain Flour, 1/4 Cup Corn Starch, 1/2 Tsp Baking Powder, 3 Tbsps Maple Syrup
- Spread your dough out onto a baking tray and bake in the same preheated oven for about 10-15 mins (making sure to keep an eye on them so they don’t burn)
For the Maple Cookie Butter
- In a blender, mix together your maple syrup and maple cookie crumbs1/4 Cup Maple Syrup, Maple Cookies Crumbs
- Pulse on high until your cookie butter becomes smooth and has the texture of peanut butter (may need to add a bit more maple syrup or a bit less depending on the consistency of your cookie butter)
For the Maple Buttercream
- Cream together your butter, maple syrup and powdered sugar1/4 Cup Softened Butter, 3 Tbsps Maple Syrup, 1-2 Cups Powdered Sugar
- If needed add a few tbsps of milk to loosen up the consistency of the buttercreamFew Tbsps Milk
Maple Simple Syrup
- Mix together your milk and maple syrup and your done!4 Tbsps Milk, 3 Tbsps Maple Syrup
Assembling the Cake
- Begin by spreading some buttercream onto your turntable/cake plate
- Place down your first cake layer
- Add some of your simple syrup onto your cake
- Spread some buttercream onto your cake
- Add a dollop of maple cookie butter and continue to spread this out
- Add your next cake layer and continue with the process of simple syrup, buttercream and cookie butter until you reach the top of your cake
- When you reach your third cake layer, flip it over for a smoother edge and place it onto your other cakes
- Add some simple syrup and then place in the fridge for 1 hour/freezer for about 20 mins
- Cut a cube of fondant and shape it to look like a piece of butter and then place it in the freezer for about 20 minsCream Fondant
- After your cake has come out of the freezer, spread a small amount of buttercream onto the top of your cake (leaving a small border of cake around the top)
- Finish your cake by drizzling some maple syrup over the top and adding your fondant square of butter and your are done!Maple Syrup
